Change Anthropic models to refer to the `latest` versions

ANTHROPIC_MODELS in view.ts currently refer to specific (old) date-based versions. I believe that it would be both more useful, and more consistent with the other providers to refer to the -latest versions defined in https://docs.anthropic.com/en/docs/about-claude/models
