Support a `--no-assets` option

The dev tools will always copy the project's assets directory into the output one. It would be nice to have a --no-assets option to disable this

Is the scenario here that you already have an assets directory used for something else?

Yes! I ran into this because in my personal blog project: I already have an asset directory that is managed and copied already by some other build script. What is like the tools to do is just build the component and put it in the output directory without copying the assets over once again
