Add Topper swap video + user guide update

Add links to the video that Tyler created showing how to swap the topper on the Sprice Joystick.

Also add in update to the user guide on how to use the toppers/swap them

Could not add the video to GitHub as the size was too big and we currently do not have the video on YouTube but I added step by step photo and text instructions on how to change the toppers.

Still need to put a link to the video.
