Add Matrix again

In the past, I already hosted matrix but wasnt sold.

Now, I want to bring it back.

I already started on https://github.com/maybeanerd/home-cluster/tree/feat/matrix , but it seems they also very recently published their own charts!
We should take a look at those and try using them instead

Accidentally closed when merging the PR for testing.
The chart works well, but it relies heavily on ingresses

Let's first move to use ingresses again, then this chart should work perfectly.
