[Feature Request] Seed Studio Xiao display options

I'm working with my new xiao starter kit, which seems to work well and is wonderfully tiny, but it's clear that, though seeed makes a couple display options for xiao, they are not supported in the meshtastic firmware.
I think it would promote usage of other xiao accessories if the displays were supported, perhaps by a checkbox choice in the web flasher, similar the the choice to bundle the webui. There's a 240x240 round touch display, as well as an oled on the expansion board they make. With the round display, there are printable cases that could make a housed node that could be really slick.

Trying to do some work on this.

The Seeed docs for the round display are refreshingly thorough. There's a driver for the display itself and also Seeed's fork of TFT_eSPI with platform-specific features for their boards; those would need to be added as dependencies in a new variant for Seeed boards with the round display.

Some kind folks on the Discord directed me to the Heltec t114 variant in the firmware, since that's also an nRF52840 + SX1262 board with a TFT display. Shouldn't be too much work to get it running on the XIAO nRF52840 - the tricky part will be getting a UI meant for rectangle displays working on a round one!
