Nginx pods need Anti-Affinity

Can end up with 2 pods on one node:

The config does't have Anti-Affinity https://github.com/metacpan/metacpan-k8s/blob/main/platform/ingress-nginx/kustomization.yaml

This leads to the load balancer not being happy:

Not sure we even need nginx now? - one for DCL
