Support for extra variables (e.g. wind speed) for verif outputs with anemoidataset as the observation source.
In the current code base only variables available in the Anemoi dataset can be used as observation source, not deduced variables like getting wind speed from wind components. As extra variables is already supported as part of the predictions, this should be a relatively minor fix in the anemoidataset source.
