Bump Quarkus to `3.20.2.2`

As we cannot easily upgrade to Operator SDK 7.2 and Quarkus 3.26, we can at least upgrade to the latest 3.20 LTS, which should be 3.20.2.2.

Actually, it is not possible to upgrade to Quarkus 3.20 (and even 3.18) because we have inconsistencies between the Quarkus version and the Operator SDK dev services in development mode.

Quarkus 3.20 dev mode fails with:

I think the only solution is to upgrade the Quarkus version in coordination with the Operator SDK version. This must be postponed to a later version as we'll probably not be able to do it for 0.0.6
