How would you register the Fabric Icons using this starter?

The method in the documentation seems to work fine in development, but not in production.

import { initializeIcons } from '@uifabric/icons';
initializeIcons();

I'm guessing its something to do gatsby, but i'm not sure if there is a different way to register the icons for ssr?
