Unwanted highlighting of strings in the output cell renders them unreadable

Jupyter notebook highlights the string values in the output cell that makes them unreadable. The only way to read them is if you highlight them manually by selecting them. This is not affected by the VSCode theme and below are some of my related settings (pertaining to notebook and jupyter).

This might have happened as a result of a new update (or not) but it started happening 2-3 months ago. The output of jupyter cells
