Tags aren't modernised in most buffers

Hey,

Thanks for the amazing package. I've recently updated to emacs 30.1 (which may or may not be the cause), and noticed that the tags are displayed as usual in base emacs. They are only altered in the agenda:

In personal.org

In org-agenda

I don't see this problem. Did you try with emacs -Q?

emacs -Q with modus-operandi, after running the exact same config as above:

Hmm, maybe it is an issue on Emacs 30. I don't see problems with emacs -Q on Emacs 31 with only org-modern-mode and no additional config enabled.

I should have tested with no additional config, the problem is caused by something there... (emacs -Q with only M-x package-install RET org-modern -> M-x org-modern-mode works as expected.

However I can't see why anything in the config could affect the face of tags, timestamps and the title.

Getting the same thing on Emacs 31.

The variable that causes it is org-modern-fold-stars, setting it to non-nil fixes all the issues I can see, but I prefer the look of nil.
