Remove obsolete VolSync and backup documentation

Deleted several outdated documentation files related to VolSync, backup/restore architecture, and secrets management. Updated ArgoCD and Kyverno controller configurations, added new PVC plumber and VolSync manifests, and removed the old Kyverno VolSync policy.
