What is the best way to modify the <p> font size in _page.scss styles?

I'm trying to customize the font size for the .page__content class in _page.scss.
To override how the <p> tag is working, I'm adding some css to the main.scss file after the imports, which works fine.

The documentation says you can do size customization using the type variables but they don't appear to be used in the area I want to change:

minimal-mistakes/_sass/minimal-mistakes/_page.scss

Short of copying the entire _sass folder and customizing that way, is the way I have achieved changing the <p> font size by adding custom css the easiest path?
