No easy way to update exposure time window without completely recreating the exposure signal

Currently, the config is expecting either a fully formed exposure signal or nothing. It would be convenient if users could use the existing signal definition, when one is inferred by mozanalysis, but update the time range (current default is to only count exposures during the enrollment period)
