Docs: use production NXP LA9310 part, update environment temp range.

The prototype boards used the extended temperature range NXP LA9310 variant, whereas production boards will not. I've updated the part number on the Introduction page, but the temperature range needs updating here, and you should check the rest of the document to ensure the correct part number is used. This is LA9310S7S11AA.

Just occurred to me also, had we even confirmed that all the other parts on this board were also rated for industrial temperature range?

Updated all mentions of LA9310X7S11AA to LA9310S7S11AA in 74c338c
I also updated Operating temperature to Commercial-grade and added note that Industrial-grade is available on request.

Yes I reviewed BOM and all ICs were Industrial-grade or better.
