examples: AWS Cognito resources using IaC

Describe the feature

We want to have ready-to-use examples on how to create different resources for AWS Cognito (User Pools, Identity Pools, . . .)

Use Case

At NaNLABS we use AWS Cognito quite often but most of the time we do it manually or using low code solutions such as Amplify. We want to have IaC solutions that match better with how we are deploying some other services nowadays.
