If we end up jumping to Rails 8.1:

• Structured Event Reporting in Rails rails/rails#55334 introduces structured logging. May want to provide some default configuration to simply log them and/or test with existing logging infrastructure to ensure they are captured.

Renovate has the package updates themselves in #86, which at least seems to run based on the PR Environment in navapbc/platform-test#212. But some code/config changes will be needed.

@doshitan any blockers on upgrading now? I just ran into a regression in 7.2 that looks to be fixed in 8.0.
More context in this slack thread but tldr Rails tries to load ActiveStorage S3 config causing assets:precompile to fail if any class with attachments is loaded during Rails initialization. I had to revert a change in flex-sdk temporarily as a result of this. I tested locally, looks like the build issue is resolved if we update Rails to 8.0

@lorenyu no hard blockers that I know of, someone just needs to go through the upgrade process (fix the broken tests, resolve deprecations/document new ones for followup, etc).
