How to set environment variables in a profile?

while building the elixir profile for a new build, i realize they have a preference for downloading binaries all over the place instead of using the ones on path.

And this behaviour is opt-out via env vars. Is there a way to set env vars on the firejail profile? or must be combined with shell profile?
