Default Wasm Images

Currently we hardcode some image versions in tests and samples for our Wasm plugin. However for users, we require they provide an image. The purpose of this task is to consider adding a default and making the field optional. Plus, see if we can wire up this default top-level for everything so we only have to update it in one place.
