Fix GraalVM build script and configuration to make it compatible with the current light-native-lambda code

Current Issues

• Reflect configurations are out of date
• Resource configurations are out of date
• GraalVM build script fails because of class instantiation issues

Goal

• Either change the code or graalvm configuration to be able to build graalvm images.
