Migrate gradle shadow plugin to the GradleUp version

Previously this plugin was developed by @johnrengelman and published under the ID com.github.johnrengelman.shadow before maintenance was transferred to the GradleUp organization to ensure future development, see GradleUp/shadow#908.

If you are still using the old plugin ID in your build script, we recommend to switch to the new plugin ID com.gradleup.shadow and update to the latest version to receive all the latest bug fixes and improvements.

We are still using the old johnrengelman version of the shadow plugin and should migrate to the new GradleUp version if possible. It looks like there is a GradleUp version that works with Java 8 and Gradle 8.3, which might be workable (I think we're currently using Gradle 7.5.1 in our GHAs).

Hi @jasonjkeller! I'd like to work on this issue.

After investigating, I found that com.gradleup.shadow starts at version 8.3.0,
which requires a minimum of Gradle 8.3. However, the repo currently uses Gradle 7.5.1
(as specified in gradle/wrapper/gradle-wrapper.properties).

This means the migration would also require upgrading the Gradle wrapper from 7.5.1 to
at least 8.3.

Before I proceed, I wanted to confirm:

1. Is upgrading the Gradle wrapper in scope for this issue?
2. Is there a specific version of com.gradleup.shadow and Gradle you'd like to target?

Community PRs are always welcome, so feel free to submit one if you decide to tackle the shadow plugin issue.

Anything is on the table. The biggest requirements are support of Java 8 and no build breakage.
