I am unable to detect such a setting anywhere.

Describe the solution you'd like
I would like is to be able to set a default font and font size, for example, that will be applied when creating a new message.
Describe alternatives you've considered
I searched the UI for such a setting as administrator (app settings) and normal user (mail settings).
