tracking: 26.05 release

The 26.05 branch off has occurred in Nixpkgs and 26.05 will be released on 2026-05-30.¹ Here's the TODO for our 26.05 release cycle:

• Update any targets which need it
  • Gnome: gnome: update gnome-shell flake input #2327
• Create 26.05 branch and backport label
• Bump stylix.release's default value on master to 26.11
• Recommend 26.05 as stable branch and remove 25.11 backport label

Although this should not be a blocker for this release cycle, it would be nice to have #2170 merged around our 26.05 release to clearly define the stable branch expectations. I will address #2170 (comment) today or tomorrow, as I should have a lot more free time during the coming weeks.

We should mention the timing, right? Because the old stable is supported for a whole month after the new stable is released.

ideally 25.11 would be support for the full month, same as nixpkgs, but Stylix is currently lacking in active contributors. the 25.11 branch has been lacking in active maintenance for a few months now (see #2179). it would be awesome if someone would hunt down the issues causing the ci failures in that pr and address them, but unless that happens i don't see a reason to keep the backport label around.
