[BUG] A few broken links on readthedocs site

Is this issue already tracked somewhere, or is this a new report?

• I've reviewed existing issues and couldn't find a duplicate for this problem.

Current Behavior

These two pages aren't rendering properly at the moment:

https://earthaccess.readthedocs.io/en/stable/user_guide/fsspec.ipynb

Expected Behavior

This might be about rendering the ipynb?

We should have MkDocs set up to throw errors when there are broken links. I think we disabled this for some reason, but it should really be turned on. Broken links are really disruptive to users and they're really easy to do accidentally.

EDIT: Looks like it was on at some point: #542; and then we turned it off here #924 (cc @betolink )

How did you discover the links you posted (https://earthaccess.readthedocs.io/en/stable/howto/edl.ipynb and https://earthaccess.readthedocs.io/en/stable/user_guide/fsspec.ipynb)? I don't see these linked from the TOC of the ReadTheDocs site itself so I wonder if we need to clean these up in the repo somewhere. Thank you!

@betolink I see the fsspec notebook included in the docs here: https://github.com/nsidc/earthaccess/blob/main/docs/user_guide/fsspec.ipynb , and similarly the EDL notebook here: https://github.com/nsidc/earthaccess/blob/main/docs/howto/edl.ipynb. Do you want to include these on our RTD site? I agree with Julie that these don't seem to render as notebooks. But I don't know if we intend to surface them, in which case perhaps we'd convert to md.

Hi! A developer colleague from the UK who joined the Nov 13 earthaccess Champions call (@sunnydean) was looking into the docs and shared the broken links with me.
