Documentation does seem to be inaccurate on this and hopefully can be corrected, but I think what you are looking for is titleHtmlOutput:

{title:"Name", field:"name", titleHtmlOutput:"Full Name"}

Thank you, this might be indeed just a documentation issue. A search for "titleHtmlOutput" shows 0 results.
Can be closed as titleHtmlOutput works as expected.
