Add logging for user debug and stdout/err capture

Given Digest AI is mostly a GUI experience, it is difficult to be verbose to ensure the user has all the information they need. Further, it's difficult to debug when inside of a GUI environment without having access to a command line. To facilitate future debug efforts with users who use Digest AI solely as a GUI (and not on the developer flow), we should implement logging to a cache directory.
