Change `otlp_exporter` to `otlp_grpc_exporter`

Based on discussion from Feb24th SIG call:

Since #2070 we now have the otlp_http_exporter.

To make more clear the distinction between this processor, and the existing otlp_exporter (which exports OTLP over gRPC), we should rename the otlp_exporter to otlp_grpc_exporter.

To do

• rename the otlp_exporter module to otlp_grpc_exporter
• change the URN from to urn:otel:otlp:exporter to urn:otel:otlp_grpc:exporter
• update any configurations referencing this component by its URN https://github.com/open-telemetry/otel-arrow/tree/main/rust/otap-dataflow/configs
• update any references to this URN in the perf test templates https://github.com/open-telemetry/otel-arrow/tree/main/tools/pipeline_perf_test/test_suites/integration/templates/configs
• Update other references to this URN (find by grepping old URN in code base). For example:
  • here https://github.com/open-telemetry/otel-arrow/blob/main/rust/otap-dataflow/crates/quiver/ARCHITECTURE.md#complete-otap-dataflow-durable-buffer-configuration-example
