Upgrade ElasticSearch and try the synonyms management API

I want to solve two bugs.

1. on my laptop, I have a kernel 6.14 and current version of ES can't be launched (this is a known bug) 

2. With my new schema for Open Food Facts, I have a hard time creating indexes because of the large number of synonyms. It completely freeze the ES for a lot of time, and the second cluster is loosing track of the master (and they don't seem to re-conciliate, which is a big strange). So I want to test if the new (in ES>8.10) synonyms management API would solve the problem in a better way (I imagine it directly stores synonyms in a processed way).
