grafana: report — for track attributes we have no source for

Type/Codec/Resolution/FPS/Bitrate come from the catalog, which the relay is
not necessarily authorised to read; QoS/QoE need client telemetry. The
columns stay so the shape is right, but they no longer carry synthesised
values. Subs, Peak and Status remain real.
