[Feature Request] Support Jackson 3.x release line

Is your feature request related to a problem? Please describe

Jackson has released major new 3.x version [1], this is major breaking change [2] comparing to 2.x release line, including both package and artifact changes.

Consider switching over to Jackson 3.x

3.0 is a major version update and thereby not API compatible with 2.x; however, since 2.10 new methods have been added in 2.x line to reduce incompatibilities.

Any idea if we're still using a lot of deprecated APIs? If so, it would probably be good to chip away at that with the 2.x version to make the switch to 3.0 a bit easier.
