Curate and organize Matlab and Python scripts

We currently have a bunch of mostly unorganized scripts for Matlab and Python. We should comb through the existing scripts and remove or update outdated ones and group them in a more user friendly way (e.g., example script vs code snippet). We should also document the location and use of each script on Confluence/Doxygen (e.g., similar to Moco's example page).
