I don't get what we expect to be present in the ZIM but is missing, could you be more specific?

I will make an assumption. Do you wanna have all plos.org books in a ZIM? Then I'm pretty sure that Zimit is not the appropriate scraper. The page https://api.plos.org/text-and-data-mining.html explains exactly how to do it properly: we need a specific scraper to retrieve JATS information, download books from this and then build a custom UI on top of these books and books metadata. Or simply do a bulk download of books and push them to a ZIM, but this is not what we want AFAIK.

Knowing what PLoS is I would assume we want to have all their litterature (which seems to be a bit ambitious: I'd favour splitting by journal), in which case a dedicated scraper should be built (and funded).
