How to apply a patch only for stable?

Description of issue

We maintain a formula for ffmpeg which has a patch for the latest stable version:

https://github.com/homebrew-ffmpeg/homebrew-ffmpeg/blob/a7c0d5c5141783cd3c1448bf9f71b7ff11dee7f3/Formula/ffmpeg.rb#L148-L151

However, in the HEAD version, this patch no longer applies and causes installations to fail. How can we skip the patch for --HEAD installs?

If I understand the cookbook correctly, I cannot test this in the patch method itself.

Enclose the patch block in a stable do block. See the PATCHES section of the cookbook for details and examples.
