Often projects combine public and non-public data. The Development Data Partnership should play a role in curating open or public data.

I know I'm repetitive, but for me (sorted by relevance)

• OpenStreetMap
• Some Py/R libraries to get free satellital imagery like sen2r and geemap
• Kontur worldwide Population Data (Meta Pop Data but lighter -in H3-)
• EUBUCCO Dataset. Like Google/MSFT Footprint data but only for Europe and better (it has even the age of each building)
• GADM for administrative boundaries, from world to neighborhood level.
