You can use different workspaces, each workspace having its own dbeaver project, connections and tabs layout. You'll also be able to have two separate DBeaver instances running at the same time in this case.
Or, if it is more convinient to have all the connections available in one DBeaver instance, even if not using them simultaneously, you can use custom perspective layouts. You still can have multiple DBeaver windows even running one application instance, each window having its own active perspective.

I have different sets of databases which I have to work with in different moments, I like to keep my tabs open on them since I usually need the same tabs across multiple days. The problem I have is that, this way, tabs of the 2 different projects get mixed up and it becomes hard to navigate them, so I was wondering: is there a way to keep the sets of open tabs separate, sort of like switching a "profile" that loads different tabs? I haven't seen such a feature being covered by Projects, but maybe I missed something
