Describe the enhancement

Currently the component does not support UC8253 e-paper display drivers.
Crowpanel 3.7-inch and a few other displays use this driver chip.

Tried configuring it as a Waveshare display, but no luck.

Use cases

Allow using displays with the UC8253 chip for e-paper display natively from ESPHome without needing additional external components.
