We should be able to override pack command in pacakge.json

Being able to override the pack command in the package.json would help us to have a custom packaging flow.

For example, I'm using rush but I do not publish the software on npmjs. we are building a different kind of system which is tar.gz based and there are a lot of directories I don't want to have in a build like .heft, .rush, temp ....

Setting the scripts.pack in the package.json doesn't overwrite the pnpm pack although I think it should, I'm using now scripts.package to package our artifact, but this means I need always to keep docs in README with the explanation of the pack script.

Having the pnpm pack to use the pack from the pacakge.json would be much more intuitive than setting a separate script name.

Any thoughts?
