My Portainer Stacks Disappeared

I shutdown my portainer server about 2 months ago and now when I started my server and logged into Portainer, I don't see any of my stacks. I can see the status of 2 containers but none of my stacks. I never setup backups but when I checked the backups folder in the docker volume (/var/lib/docker/volumes/portainer_data/_data/backups/EE), I see some backup files there but I don't know if I can restore using those files (portainer.db.061.20230501000055). Please help!

I also tried recreating the stack manually but got the following error message which mentions the name of the stack that disappeared. So this means that the stack still exists somewhere within Portainer, but when I click Stacks, it's not showing up.
