Now I am pondering how I can do analytics for the site. Would this be a capability of SWS to point to some analytics tool e.g. Google Analytics?

It sounds cool.
About analytics, I see it as a feature for a CMS or a static site generator but not for SWS. SWS is a web server that just serves files from a directory.
If you need something like Google Analytics (GA) with SWS, then probably you want to embed the GA script into your website.

About hardening, if you want to run SWS in a bare metal server or VPS then you could want to use Systemd and Socket Activation. Or if you use Docker then you probably want to follow Docker hardening best practices like this.
