I have encountered an issue where a project I built using Tauri runs very smoothly on macOS, but experiences significant lag and stuttering on Windows. I have tried several different approaches to fix this, but nothing has worked so far. Can anyone help me point out what the problem might be?

I assume this issue is with your rust code and hence not a tauri issue? (including a video would have been helpful so we see the lag/stutters).
