Add support for ZyXEL EX5601 T1 in mt7986-ax6000.config

Hi! Please integrate ZyXEL EX5601 T1 in defconfig/mt7986-ax6000.config.

I believe the hardware is quite similar to the other targets in that file.

OpenWrt .config for Zyxel EX5601‑T0 (ubootmod) + patches

• Trimmed VPN stack: removes most VPN‑related packages.
• Region defaults: United States: sets regulatory/domain defaults to US.
• DFS enabled (5 GHz): allows use of DFS channels for more spectrum (expect CAC delays on DFS channels unless zero‑wait is supported).
• Secure Wi‑Fi by default: WPA2/WPA3 SAE‑mixed for broad client compatibility.
• Debug off: driver/toolchain debug flags disabled for smaller images and quieter logs.
• If you need instant AP availability, prefer non‑DFS channels (36/40/44/48). DFS channels requires about 10 minutes to activate.

Status: Experimental!

• Retains all essential MediaTek Wi-Fi features from the upstream build.
• Simplified from multi-profile builds to a single target: zyxel_ex5601-t0-ubootmod.
• Default language set to English, with Wi-Fi region defaulting to Sweden (SE).
• Added the full SQM stack (usable only when vendor WAN/LAN acceleration is disabled --- enabled by default).
• Enabled DFS and vendor-specific DFS Zero-Wait support for countries with a valid regulatory domain mapping.
