[Umbrella] Zombienet migration and stabilization

Currently we only have two workflows marked as required in CI

• Substrate
• Parachain template

We need to also make the test from Cumulus / Polkadot required again, but first we need to finish the umbrella migration and ensure that both are rock solid stable.

Note: Some of the test that need to be migrate require the latest version of zombienet-sdk (e.g histograms checks).
