"undo" feature

I recommend to implement "undo" feature. In many occasions I wrote in a existing Note something or delete something wrongly and I couldn't recover the previous screen or situation. I definitive lost what I had before. It is very risky manipulate an existing Note when you make a mistake.

Implementing undo for every action is a huge undertaking and would basically be a rewrite with that "feature" in mind with massive complexity added.

In your case I'd just make use of the git feature or sync the note folder to a service like nextcloud where you have versioning or create backups or use a copy on write Filesystem with snapshots.

That will not help you a lot. Saves are done every 10 sec automatically by default. You need a more robust solution, the kind I mentioned above. Turning on "git" for a note folder is trivial in QOwnNotes and you can roll back from that. You can also restore old note versions in QOwnNotes.
