Debian trixie does not offer libncurses5 package

For "trixie" this package name will need to be changed to "libncurses6".

Thanks @fastjames! Fwiw all I needed was the change James mentioned. I verified that it was working with the hexpm/elixir:1.18.4-erlang-28.1-debian-trixie-20250929-slim image after that.
