Add explanation on why a setting changes exist

I understand why this repo exists, #1 (comment) explains it well.

I'm new to pnpm usage, and while the official docs explains why such a settings is doing and the values, I don't know why the better defaults config changes exists.

For example:

Sets hoistPattern to an empty array, disabling hoisting.

I thought it was a good practice in pnpm to have hoisting in pnpm, but the better-defaults says no.

Having a one liner per settings, in the readme, explaining why such better defaults was changes would be super helpful to a newcomer to pnpm!
