Consider using release-it for generating GitHub-compatible releases, changelog, & maybe release candidates on PRs

Might be more effort than it's worth, though

For now, we're continuing to regularly publish w/ semver, and someone who's curious about the content of a version can always just say, "I want to see how the contents for v0.5.1 are different from current, so I'll go to v0.5.1...main"
