The option to change the audio track is missing, unlike the YouTube mobile app or the desktop version of the YouTube website.

As YTPRO uses web version of YouTube mobile , the feature of audio change itself isn't implemented in the mobile web version by YouTube.
Thus i can't really do anything in that

On the top of that , Audio Change feature is available on YouTube Shorts , maybe they will implement that in the videos as well in near future

Would it be possible to emulate the desktop version’s DOM or use the same internal APIs that the desktop site uses, so the audio change feature could work?
