Add missing fields to evaluations

Some missing values:

- Anonymity set size (leave till later/lower priority)
- Time to finality (default to Ethereum blocktime)
- Deposit time (if protocol enforces any deposit times e.g. bridging/ timeperiod for ASPs. Zero if nothing is mandated by the protocol)
- Withdraw time (if protocol enforces any deposit times e.g. bridging/time period for ASPs. Zero if nothing is mandated by the protocol)
