chore: Add "stable" to point to the stable version of the documentation.

@rouk1 pointed it out that we directly use https://docs.skore.probabl.ai/0.11/ which will be referenced. It is a bit problematic when we are going to release new version because an older version will be referenced.

It would be good to make https://docs.skore.probabl.ai/stable/ referenced which will point on a specific version instead.

@thomass-dev do you think it is possible?

By we, you mean the front page of the hub? If so, the hub point to https://docs.skore.probabl.ai/, not https://docs.skore.probabl.ai/0.11/.

Poiting to https://docs.skore.probabl.ai/ is good, the redirection to the latest release is automatic.

As we link to the documentation in some page, it would be very nice to have some kind of alias to the current stable version.

i.e. one should never right https://docs.skore.probabl.ai/0.11/auto_examples/getting_started/plot_skore_getting_started.html rather one would like to write https://docs.skore.probabl.ai/stable/auto_examples/getting_started/plot_skore_getting_started.html.

This is good for search engine and LLM indexation.

Here is the scikit-learn repo: https://github.com/scikit-learn/scikit-learn.github.io

What we do is that main is pushing in the dev folder. Then, when pushing in a branch on the main repo will update on of the folder. And finally, we just create a symlink for stable that we update at each release.

Then, if I recall, we define a canonical link to point to stable: https://github.com/scikit-learn/scikit-learn.github.io/blob/main/index.html#L43

I don't know if it can serve of some inspiration here.

I would like to do this, but we can't create a symlink on the S3 bucket.; but no worry, we will have a stable version.
