TESTS - Further improvements to our Playwright tests

Per @drammock review in #2133 there are several improvements we can add to our Playwright tests:

• Refactor _check_test_sites and symlinking of test sites
• Simplify the setup for test sites (group multiple test sites in one or remove unnecessary items)
